Sour Cream and Lemon Corn Muffins

Good Morning!
And how are you on this beautiful Friday morning?  Hungry?  What's for breakfast? (Okay, I'm sure from the title of this post you've used your impeccable deductive reasoning skills to figure it out... but here's how I got to this point.)

*wakes up*
*hums to self*
*saunters downstairs*

"Hiya Daddy! Was fer breffas?"  (I always ask the nearest parental what's for breakfast... even though I always make my own breakfast... maybe I'm just hoping someday they'll answer with something like, "Pancakes!" or "Muffins!" or "Flan!" Okay, really, I had to eat flan for breakfast once.)

"Not much, we're out of milk."

No. Milk.

What?!?!?

That eliminates the possibility of cupcakes AND cereal!!! Oh no!

You know it's bad when you can't even eat cereal for breakfast.

This morning presented a similar challenge to last night's dinner dilemma.

Inspired by the title of this recipe, I created my own faster, more simple version.   I'm sure someday his might be worth a try, but really, these are much easier and totally delicious.  And if you're anything like me, you don't often think about food until you're hungry and want something to eat NOW!



19.6.2013 UPDATE: So um... I'm very sad I didn't finish this blog when I remembered exactly what I did to make them.  I thought I had it written down somewhere, but as of now, can't seem to find it.  I guess I'll just have to make them again!  I'm reasonably certain, I used a Jiffy Corn Muffin box mix... and added sour cream instead of milk.  But I also added some portion (Tablespoon?) of lemon juice.

CONCLUSION:
These were totally delicious!!! The lemon juice or sour cream, does something really interesting to the texture... they were almost creamy.  It was awesome.  I've been meaning to make them again for some time now... So I guess I'll have to try an replicate what I did before, and fill y'all in on it.

Fake Fried Rice

I wish I could say, "I love Asian food!"
... but I can't, for a couple of big reasons...

1.  I've never actually been to anywhere in Asia, so I'm pretty sure I've never had anything terribly authentic.
2.  I've only ever had "Chinese" food.  You know, like cheap take-out (mind you, some of it has been kind of tasty, even if it isn't anything close to the real thing.)


Yet, one of my favorite things to make (and eat) is something inspired by what I know about Asian foodstuff (rice, ginger, veggies, noodles, sesame, eggs, etc).

Without further ado, I give you, Lauren's Fake Fried Rice.

Which usually looks something like this:



Here's what you'll need:

1 box Rice-a-Roni (any flavor you like)
celery (as much of it as you'd like... I like lots, I've used up to 6 stalks for a single serving)
peppers or other vegetables of your choosing... water chestnuts or peas... whatever you have really
fresh/powdered ginger and garlic (minced/chopped to your preference)
soy sauce (to taste)
sesame oil (to taste) and/or sesame seeds
peanuts or cashews optional
eggs (as many as you'd like)
Asian inspired sauce or marinade as you like (optional)

The first thing I do is prepare the rice-a-roni according to the box directions (If you're good at multitasking, you can start to prepare or cook the other vegetables while you're browning the rice.  If you aren't good at multitasking, you should probably wait until the water starts boiling and you turn it down to simmer, and then veggie prep.)

Next, I fry up the veggies and garlic and ginger (in sesame oil or butter [the butter crisps them, which is nice])

When the veggies are done enough for you, I dump them onto a plate or back on to the cutting board, so I can cook the eggs in the same pan.

Scramble the eggs.  When the eggs are nearly done, I toss back in the veggies to keep everything warm. (If the rice isn't done, turn off the stove or remove from heat until it is.)

When the rice is done, scoop as much rice as you'd like into the egg/veggie mix.

Return the pan to heat, and mix everything together, adding the soy sauce or other sauce or seasonings you like.

I did this after I got home from work tonight, and the whole thing only took me about 20 minutes or so make up.  It was fabulous.  I was only cooking for myself, but it would only have added about 5-10 minutes to cook for my whole family.  (Maybe more if I'd had to wash the big frying pan... which still has bacon grease in it...)


BBC 100 Books

So I've seen this list bounce around on a few different sites.  It claims the BBC said the average person has only read six of the books on this list.  So, like any responsible person, I Googled it.  The only thing from the BBC about the list is this page. Which says, "In April 2003 the BBC's Big Read began the search for the nation's best-loved novel, and we asked you to nominate your favourite books."

This is VERY different than the average person only having read 6 of the 100 books.  So don't feel all special when you've read a quarter or more of the list.  Because this is a collective "Favorites" list... which means quite the opposite of "average reader has never read" list.  Just saying. 

In other news... I've always thought this was a good place to start making myself literate and familiar with popular culture.  So for your browsing enjoyment, I've included the list below, with books I've read crossed out.  Hopefully one day, all of them will be that way. (I'll include completion dates if I know them.)

Black Bean and Corn Quesadillas




At about 9 o'clock this evening, I finally got tired of waiting for my parents to come home from work (and a visit to the grocery store), and decided I was going to make dinner without them.  Being car-less and past the closing time of all food stores within reasonable walking distance (2-5 miles).

So I was left with three options:

1- Forage for leftovers (but really what fun is that?)
2- Throw together whatever I can find from the cabinets
3- Don't eat.

Naturally, I decided to go the more adventurous route and see what kind of concoction I could scrounge up from the random foodstuffs in the cupboards and fridge.

Originally, we were going to have tacos for dinner... so my mind was kind of in the "fake Mexican food" mood and mode.  So with that in mind, I started opening cupboards.

The spoils of pillaging?

1 can of black beans
1 can of corn
1 can of petite diced tomatoes
1 can of diced green chilies (fire roasted for extra fancy!)
garlic
sharp cheddar cheese
flour tortillas of an unknown age and without an expiration date (but not moldy, so okay?) (I recommend knowing the age of the food in your cupboards and fridge... just as a good, sanitary health practice.)

So here's how this went down.

Pour a tablespoon or so of oil into a large skillet/frying pan thingy.  Add 3-5 cloves of crushed garlic... and let that heat for a few minutes.

Drain and rinse black beans.  Drain corn and tomatoes.

Add black beans, corn, tomatoes, and green chilies to skillet.

Stir occasionally and heat/cook until excess water/juice is gone... but don't dry it out.  Remove from heat.

In a separate frying pan/skillet thing, heat a tablespoon or so of oil, and flop down your first tortilla.

Sprinkle plenty of grated cheese on the tortilla in the pan and then spoon the black bean mixture on top of the cheese... as thick as you'd like! (I did about 1/4-1/2 inch.)

Place the second tortilla on top.

Flip.

Cook on the other side.

Slide off pan onto [clean] counter, cutting board, or plate.

Cut into wedges/slices.

Garnish with lettuce and sour cream.

Take pictures for blog (but not very good ones because you're too hungry and it's getting cold).

Consume ferociously.

23 Things to do Before I'm 23

Hi all,
I'm not sure if I should post date this or not... I guess I probably won't.  As mentioned in my previous post, I have a list of 23 things to do as well.  And as I also mentioned, I have yet to finish it.  Hopefully I will be crossing off a number of things within the next week or so. :)

So here goes!  (This has been slightly modified from the original list... which I may have misplaced. :-\ )

I know it doesn't really look like I've done much... well, I haven't.  But what you can't see is that I'm pretty close on quite a few things.  There are a couple things that might take a little while... like 12 and 10.

I'm reasonably certain I'm going to drag some friends to Canada this summer. (I've been to Canada before, but not since like 2005 or something crazy like that.)

I should be publishing something within the next month!

The next time I'm in the City, the CPZ is at the top of my list!

Hopefully I'll be able to wiggle in a show at Blackfriars within the next week or so.

I'm planning on going camping soon, and while it is lamentable I don't have my uke at the moment, I will be hiking Mt. Pleasant and cooking some soup!

In less than 48 hours I will be done with all of my term papers and projects!

And I definitely have at least three, maybe four, really solid looks for a photo shoot (penciled in this summer).

And I think blogging counts as writing something for fun! But in the spirit of not double counting things, I'm sure sometime in the next week or so, I'll be writing something for fun--that's just what I do!

So that really just leaves the 5k, the bikini, 1**, and picking locks...  three of those things kind of go together, and will be happening in a couple months. :)  The other thing I'm sure I can pick up pretty quickly.

Catch ya on the flip side!  I'll start updating and sharing some stories once this school thing is over in a couple days!  Because me oh my! There are stories!!!

24 Things to do Before I turn 24

For a couple of years now, I've been creating fun To Do/Goal/Bucket sort of lists of things to do before my next birthday.  Ideally, I would like to have the list for the next year done before my birthday, so I have the maximum amount of time to complete it... but life doesn't always happen like that.  Also, I have yet to complete an entire list.  Part of the reason is because when I write the list, I tend to imagine my schedule for the coming year one way... and then because of all the wonderful new opportunities presented in life... it takes you in different directions than you had originally intended.  As such, some things have been slightly modified, and others have just not been able to be completed as planned... I'll get there someday... and soon!

After my first two years (and first two failed attempts), of trying this fun little game, I've added the completion of my 22 and 23 lists as the pre-requisite for my 24 list.  (I'll post those lists later as well as posts about each adventure and some pictures!).

Today, I finally filled in the last two slots on my 24 list, so I thought I'd post it. :)

1. Find out how many licks it takes to get to the center of a Tootsie pop
2. Join the DAR
3. Join the Mayflower Society
4. Solve a Rubix Cube (by myself!)
